Preheat the oven to 180º C / 350º F.
Choose seasonnable apples .
Select them juicy and tart, and
Make sure the variety
You choose will hold well to cooking.
Ask your produce purveyor for assistance.
Wash the apples, but
Do not peel them.
Cut them slightly at the base so that they may “stand.”
Core them with a vegetable peeler:
Push it in the center of the apple all the way up and
Turning at the same time to remove the seeds.
Place the apples in an ovenproof baking dish,
Such as a gratin dish.
At the center of each apple,
Place a pat of butter and
A pinch of cinnamon.
Sprinkle with brown sugar or vergeoise.
Pour the juice of a freshly squeezed orange over the apples.
Place in the hot oven.
Thirty to forty minutes later,
The skin will have cracked open and the apples will be golden.
Serve immediately.
I just love them when they are hot!
- If you find that the apples are burning, lower the oven temperature during cooking.
- For a delicious change, sprinkle the apples with some raisins or
sliced almonds.
- For further enjoyment, serve with vanilla or cinnamon ice cream,
and one speculaas cookie per person.
- If you are serving adults,
pour half a glass of calvados in the baking dish as the apples cook.
