Preheat the oven to 180 º C / 350º F.
Prepare an ovenproof tray.
Sprinkle with flour.
Dip the bread slices into a bowl of water -
Any type of day-old, slightly dry bread will do.
Even better, use mixed-grain bread,
Or raisin bread!
In a large bowl,
Mix the two meats together by hand,
Just like dough, with
A pinch of salt,
A pinch of quatre épices,
Which is generally made up of
nutmeg, a clove, cinnamon and ginger, and
A good pinch of cinnamon.
Mix in the whole egg, and
Knead.
Then,
Add the shallot, finely minced, and
One garlic clove, finely minced.
Finally, wring out the bread.
Incorporate into the mixture.
Use your fingers to mold the mixture
Into the shape of a loaf of sandwich bread!
Place on the floured tray.
Lightly flour the loaf of meat.
Place in the oven,
First in a 200ºC / 400ºF oven for fifteen minutes.
Then,
Lower the temperature to 180ºC / 350ºF
And cook for approximately one hour more.
Serve hot or warm with a good
express tomato sauce , and
Crunchy green beans,
Nothing more!

Dip the bread slices into chicken broth or milk!

Add one or two slices of bacon
to the meat.
For 6 people:
➢ 400 g / 1 lb ground beef
➢ 200 g / 1/2 lb ground veal
➢ 2 slices of bread, crusts removed
➢ 1 shallot
➢ 1 garlic clove
➢ 1 egg
➢ 1 pinch quatre épices
➢ 1 good pinch cinnamon
➢ 1 tablespoon flour
➢ A small amount of water or chicken broth
