Cook pasta to perfection,
I prefer to use spaghetti.
While the pasta water is boiling…
In a large frying pan,
Sauté two garlic cloves, sliced and sprouts removed,
Until golden.
Add three anchovies, and
A few anise seeds.
Once the anchovies have softened, in about 3 minutes or so,
Flavor with a small pinch of cinnamon.
Add a good handful of raisins.
Toss the pasta into the anchovy mixture.
Remember to add some of the pasta cooking liquid!
Reheat the pasta quickly, stirring constantly.
Add another small pinch of cinnamon.
Serve in warm plates,
if possible.
