One 3-minute soft-boiled egg per person.
One small jar or tin of pressed caviar
(not as expensive as Osetra caviar)
Or :
A few thin slices of black truffle.
When the eggs are cooked,
3 minutes only,
Open them as you do soft-boiled eggs.
With a small spoon,
Remove contents of the egg, and
Place in the blender.
Try to keep the egg shell intact!
As with any type of blender mixing,
Incorporate the pressed caviar slowly.
Taste.
Add more caviar if you like,
But do not add salt!
Mix to obtain a mousse.
Pour the preparation into the egg shells.
Serve immediately.
Enjoy!
Now, if you go for the truffle:
A few drops of truffle oil can be added to the egg mousse.
Garnish with a few slices of truffle over the preparation in the egg shell.
That’s it!
- To cook a soft-boiled egg:
Boil some water
Add a pinch of salt
Lower the heat
Using a spoon,
immerse the eggs in the water, and count three minutes in simmering water.
Refresh with cold water.
