Ground:
Like any ground or powdered spice,
It needs to be stored away from light and heat,
In a tightly sealed container!
Fresh:
It can be kept several weeks in the refrigerator.
Avoid the vegetable bin, which may cause it to mold.
It can be frozen.
A piece can then be grated (still frozen) when needed for cooking.
Remember:
Do not thaw ginger,
As it would become soft and
Difficult to grate.
