white button mushrooms, marinated in lemon

Select large, plump, white button mushrooms.

Remove the stem of the mushrooms.
Peel off the skin: It comes off easily by hand.
Dice the mushroom caps as thinly as possible and
Place on a pretty platter.

Douse as much lemon juice as needed
Over the mushrooms.

Using a vegetable peeler,
Collect a nice strip of lemon rind and
Cut it into small strips.
Then,
Place in a bowl filled with water.
Put it all into the microwave oven to blanch:
This will take away the bitterness of the lemon rind.
Drain the lemon zest and sprinkle over the mushroom platter.

Drizzle strong olive oil over the platter and
Snip chives over the mushrooms with scissors.

Sprinkle with a pinch of coarse Guérande sea salt and
Place the pepper mill on the table.
