Peel the bananas.
Using a vegetable peeler,
Collect a nice strip of thoroughly scrubbed lime rind.
Finely slice the zest,
Place in a bowl filled with water, and
Blanch two minutes in the microwave oven.
Drain the lime zest in a sieve.
Sprinkle fine granulated white sugar in a skillet.
Melt until the caramel turns light golden.
Add a tablespoon of butter and melt.
Pour in the juice of two limes.
Reduce for two minutes.
Place the bananas in the skillet, and
Caramelize gently.
For the grown-ups around the table,
Flambé with a little rum.
Reduce the caramel.
Sprinkle with the lime zest.
Serve with a scoop of coconut ice cream.
- Of course, this recipe works with regular bananas,
but the mini version is more fun!
- Try this also with lemon and a piece of grated fresh ginger.
- For those who want to stay away from white sugar,
simply replace with brown sugar or honey.
