As many slices of stale brioche or stale bread
That the young and young-at-heart can devour!
Prepare the eggnog:
Mix 1 liter / 1 quart fresh whole milk with 4 egg yolks
And two packets of vanilla sugar.
Pour grape seed oil into the pan:
About 3 cm / 1 inch deep.
Heat the oil
(grape seed oil does not smoke, and its taste is the most neutral of all oils.)
Dip the bread or brioche slices in the egg mixture and
Let them soak up generously.
Soak as many slices as you will be cooking at one time.
Using tongs,
Plunge the bread or brioche slices into the hot oil.
Turn them to make each side golden.
Place them on a large dish with paper towels
To absorb the excess oil.
There you have it,
French Toast!
Sprinkle powdered sugar, vanilla sugar, or
Cinnamon over the French toast in each individual plate.
- Stale bread or 2-day old brioche provide much better results
than fresh bread or same-day oven fresh brioche for this recipe.
- For caramel fans, instead of plunging the bread into oil,
melt some sugar in the pan, add a little butter, and caramelize the bread!

➢ Stale bread or brioche
➢ 1 liter / 1 quarter fresh whole milk
➢ 4 egg yolks
➢ 2 packets vanilla sugar
➢ Powdered sugar
