Select a nice bunch of fragrant mint.
Keep the bunch whole.
Cut the stems crosswise.
Fill two separate bowls with cold water:
In the first one, pour a tiny drop of bleach, and
In the second one, pour a little white alcohol vinegar.
Plunge the bunch of mint into the first bowl for 5 minutes, and
Then plunge it again into the second bowl, also for 5 minutes.
Carefully spin and blot dry.
Take a plastic bag and pierce several holes in it.
Place the mint in the bag.
Store in the refrigerator.
- You can do the same with any other fresh herb: basil, chives, parsley, dill, tarragon, etc.

Thus cleaned,
Mint will remain fresh and green
For a whole week.
I like to keep mint leaves whole when I mix them with salad leaves or other herbs.
But be sure to snip your mint at the very last minute,
as you would any other herb,
in order to retain a maximum of flavor!
