steamed lamb shanks

The lamb shank is the most
Delicious and tender
Of all lamb cuts!

Order one lamb shank per person from your butcher –
Lamb shanks are not usually available the same day!

Rinse and dry a bunch of fresh mint.

Boil some water in a steamer stockpot,
Large enough to accommodate the paper pouch papillotes!

Cut out the parchment paper for the papillotes.
Place one lamb shank on each cut-out piece of paper.
Pour a small teaspoonful of liquid honey, and
Sprinkle with the following spice mixture:
Cinnamon,
Cumin,
Ginger,
Nutmeg –
Just a pinch each!
Add a sprig of mint to each papillote, and
Close with a toothpick, if need be!

Place the papillotes in the steamer basket.
Cover.
Check the water level regularly during cooking.
Steam for 40 minutes.

Serve with small steamed potatoes or
Seasonable green vegetables,
As well as a tasty little mint sauce!

- Prepare your spice mixture with whatever is available in your pantry!

- For a touch of tartness, add a slice of lime to the papillote.

- I do not add salt during cooking.
I leave it up to each guest to season with salt and pepper to taste at the table.

For a nice change,
prepare with coriander and raisins!

One lamb shank per person and per papillote:
➢ Pinch each of the following ground spices:
o Cinnamon
o Cumin
o Ginger
o Nutmeg
➢ 1 teaspoon liquid honey
➢ 1 sprig fresh mint
