A few basic principles…

When pouring sugar over egg yolks, it is imperative to beat the yolks immediately because sugar essentially ‘cooks’ the yolks.

That is why these yolks can be incorporated into a hot preparation (milk, for instance.)

What will you do with that leftover morsel of black or white truffle from yesterday’s holiday meal?
Don’t let it go to waste: Simply place it with raw eggs in a sealed jar and refrigerate:
The eggs will be infused with truffle fragrance.
