Of course, homemade grated carrots are divine!
But “life happens”…
And if you feel a little lazy at times,
It’s OK to go to the store and buy them already grated!
Either way,
Prepare the dressing with
The juice of half a freshly squeezed orange,
The juice of half a freshly squeezed lemon, and
Fragrant olive oil,
In double the quantity of the citrus fruit.
Add a pinch of Guérande sea salt,
A few sprigs of fresh thyme…
Emulsify, taste, and adjust to balance.
- Spend 5 minutes more on this:
Incorporate orange sections peeled to the flesh,
and slivered almonds sautéed in a dry pan.

Freshly
grated carrot salad is
commonplace in France,
but…
season it with
an orange vinaigrette, and
suddenly, it’s magic!

Why not do as our friend Philippe does,
and flavor the grated carrots with a good fig vinegar.
Let’s hear it for gourmet salads!
Be sure in this case, however, not to include any lemon juice…
For the vinaigrette:
➢ Freshly squeezed juice of ½ an orange
➢ Freshly squeezed juice of ½ a lemon
➢ Fragrant olive oil
➢ Pinch of Guérande sea salt
➢ Sprigs of fresh thyme
And
➢ Grated carrots
