john dory fillets quickly marinated in lime and rose water

Ask your fishmonger
To kindly cut the John Dory fillets
Into thin slices!

Otherwise, armed simply
With a good filleting knife,
You can slice the fillets yourself!

Keep the fish refrigerated in a dish,
Covered with plastic wrap.

Prepare the sauce using
Olive oil,
The zest and juice of one lime,
A pinch of salt,
One teaspoon rose water, and
Several rose hips
Lightly crushed in a mortar.
Blend to emulsify, and
Adjust the seasonings.

When you are ready to serve,
Pour the sauce over the fish, and
Sprinkle with a few fresh mint leaves!

Try serving this with
the Sweet Mango and Pink Grapefruit Salad !

An extra special touch:
Place on the table
A small dish of coarse Guérande sea salt
With coarsely chopped raw pistachios!

One dish, two choices!

- Serve as a first course simply with
crunchy green and white asparagus.

- Serve as a main course with
Small potatoes (I like the ratte variety,)
steamed and drizzled with olive oil.

Almost a "ceviche",

For 6 people :

➢ As a first course,
100 g / 3.5 oz John Dory fillet per person
➢ As a main course, 150 g / 5.5 oz
➢ 4 tablespoons olive oil
➢ Juice of 1 lime
➢ Grated zest of the lime
➢ Pinch of salt
➢ 1 teaspoon rose water
➢ 1 teaspoon rose hips
➢ A few fresh mint leaves
