Rinse some fresh thyme sprigs and dry.
Place in a small, clean bottle.
Fill the bottle with olive oil, and
Keep in a warm place.
Steep for at least two weeks.
Strain.
Place some new thyme branches,
Inside the bottle
To help identify the oil.
- Use this thyme-flavored oil for:
A lamb marinade for a stew, or
A roasted leg of lamb,
A simple green salad, or
Small, warm potatoes.
- Drizzle thyme-flavored oil over green beans.
- Sauté scallops in thyme-flavored oil.

You can do the same with vinegar:
warm some wine or apple cider vinegar, and
pour over some lightly crushed thyme.
Steep for two weeks.
Strain.
