Crush a garlic clove with the back of a knife.
Discard the peel, and
Remove any sprout.
In a small non-stick pan, heat a drizzle of olive oil.
Toss in the sprout-free, thinly sliced garlic,
A sprig of thyme,
A sprig of rosemary, if you have any!
Heat for less than a minute, as the garlic should become golden,
To develop its fragrance!
Open a can of whole peeled tomatoes.
Use kitchen shears to cut them up in the can.
Pour the tomatoes into the olive oil.
Incorporate a small spoonful of honey
For a little tang, as well as
A pinch of salt.
Melt for 5 minutes.
Taste and
Rectify the salt if needed.
Before serving, grate the peel of a thoroughly washed lemon over the sauce.
Decorate with whole basil leaves.
Serve this sauce with good-quality pasta.
- Always have a can of peeled Italian tomatoes
at hand in your pantry!
- Replace thyme with coriander seeds.

➢ One 400 gr / 14 oz can
of peeled Italian tomatoes
➢ One clove of garlic
➢ One sprig of thyme
➢ One sprig of rosemary
➢ One small spoonful of honey
➢ Olive oil
➢ A pinch of salt
➢ The grated peel of half a lemon
