Pre-heat your oven to 180 º C / 350 º F.
Place the tomatoes on a baking sheet,
Together with the garlic cloves,
The herbs (oregano and thyme,) and
The balsamic vinegar.
Sprinkle with
Sugar and
Salt.
Roll them all around in this mixture.
Roast in the oven for at least one hour.
The tomatoes and the garlic must become quite soft.
Cool.
Peel the tomatoes and
Press the garlic with the back of a knife.
Purée the entire preparation in a blender.
Taste.
Season to taste with salt,
Pepper,
Oil,
Balsamic vinegar, and
Fresh basil.
Store in a tightly sealed jar.
- Properly stored in a hermetically sealed jar,
this preparation will keep for a week in the refrigerator or
for three months in the freezer.

➢ 3 kg / 6.5 pounds of ripe and fragrant tomatoes
➢ 1 head of garlic: separate the cloves and keep the skin on
➢ Oregano
➢ Thyme
➢ Basil
➢ 2 tablespoons of balsamic vinegar
➢ 2 tablespoons of sugar (or honey)
➢ Salt
