mixed citrus salad with vanilla-flavored olive oil

“Peler à vif” (peel to the flesh) a pink grapefruit.
Do the same with:
. one sweet orange,
. one blood orange,
. tangerine segments – why not – and
. thin slices of unpeeled green apples,
For crunchiness.
Add a few drops of lemon to the apple slices.

Place all the ingredients into a bowl, and collect the juice of the citrus fruit.
Emulsify the juice with olive oil and the seeds of a scraped vanilla bean.

Open a passion fruit in two.
Collect the juice of the passion fruit for the sauce, and
Keep aside the seeds to decorate the plates.

Sprinkle the fruit with fresh whole mint leaves, and
A few fresh raspberries.

Decorate the rim of the plates with the passion fruit seeds, and
Place the mixed citrus with the vanilla-flavored oil in the middle.
Serve.

➢ 1 passion fruit
➢ 1 basket of raspberries
➢ 4 tablespoons olive oil
➢ 1 scraped vanilla bean
➢ Mint leaves for decoration
