Boil the milk in a large saucepan.
Let it cool.
Discard the skin that forms on the surface.
Pour the milk into
A large earthenware or ceramic bowl.
Stir steadily, and incorporate the spoonful of yogurt
Into the milk.
Cover with a plate.
Let it sit overnight in the oven (switched off!)
In the morning, the milk will have turned into yogurt.
Keep refrigerated.
Eat within a week.
- Be sure to always set aside a spoonful of this yogurt for the next batch!

For one liter / one quart of fresh whole milk,
> One tablespoon of Greek-style yogurt.
