Select a pasta of your choice and
cook al dente.
For one large bowl of yogurt,
Crush one garlic clove, and
Stir into the yogurt, along with a small amount of salt.
Make clarified butter.
Once the pasta has cooked,
Reserve a ladleful of the water used to cook the pasta.
Drain the pasta in a colander, and
Rinse under cold water to stop the cooking.
When you are ready to serve the meal,
Reheat the pasta in a pot with the ladleful of pasta water,
Drizzle with grape seed oil (neutral in flavor.)
Place the pasta in a serving dish.
Pour on the garlic yogurt sauce.
Mix well.
Pour the hot melted butter onto each plate, and
Serve.
- I’ve said it before and must say it again:
“Let the cook beware
And handle garlic with care.
To each his own might
In flavor and bite.”
- Using the ladleful of cooking liquid
Allows you to reduce the amount of olive oil needed
To reheat the pasta.
